Quick Chicken Tagine Filling
A fragrant, quick-cooking chicken filling infused with Moroccan spices, perfect for batbout, msemen, or flatbreads. Great for meal prep.

- 1 tspGround cumin
- 2 tbspOlive oil
- 3 tbspFresh cilantro, chopped
- 1 tspSalt
- 0.5 tspBlack pepper
- 0.5 tspGround cinnamon
- 3Garlic cloves, minced
- 0.5 tspPaprika
- 1Large onion, diced
- 100 mlChicken broth
- 100 gGreen olives, pitted
- 600 gChicken breast or thighs, diced
- 200 mlTomato sauce
- 1 tbspPreserved lemon, chopped
Instructions
Brown chicken: Heat olive oil in a skillet over medium-high heat. Add diced chicken and cook until lightly browned, about 5 minutes.
Cook aromatics: Add diced onion and minced garlic, cook until softened, about 3 minutes. Stir in ground cumin, paprika, and ground cinnamon. Cook until fragrant, about 1 minute.
Simmer: Add tomato sauce, chicken broth, green olives, chopped preserved lemon, salt, and black pepper. Simmer for 10-15 minutes until the chicken is cooked through and sauce is reduced.
Finish: Stir in fresh cilantro. Taste and adjust seasonings. Use warm as a filling for batbout or other flatbreads.
