- 0.5 tspSweet paprika
- 4 tbspOlive oil
- 0.25 cupFresh parsley, chopped
- 0.75 tspSalt
- 0.25 tspBlack pepper
- 2 tbspFresh lemon juice
- 2 tbspFresh mint, chopped
- 250 gCooked chickpeas, drained
- 1 mediumCucumber, diced
- 3 mediumTomatoes, diced
- 1 wholeBell pepper, diced
- 0.5 mediumRed onion, thinly sliced
- 2 mediumCarrots, grated
Instructions
In a large bowl, combine the chickpeas, cucumber, tomatoes, bell pepper, red onion, and grated carrots.
In a small bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper to make the dressing.
Pour the dressing over the vegetables and toss well to combine.
Fold in the fresh parsley and mint.
Let the salad sit for 10 minutes at room temperature to allow the flavors to meld.
Divide among bowls and serve as a light lunch or a side dish.
