  • 0.5 tspGround cinnamon
  • 350 gPumpkin puree
  • 180 gGranulated sugar
  • 80 gBrown sugar
  • 120 mlVegetable oil
  • 2 wholeEggs
  • 150 gDark chocolate, chopped into chunks

Instructions

  1. Preheat the oven to 175°C (350°F) and grease and line a loaf pan with parchment paper.

  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, ras el hanout, and cinnamon.

  3. In a separate large bowl, whisk the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until smooth and well combined.

  4. Fold the dry ingredients into the wet mixture, stirring just until no streaks of flour remain.

  5. Fold in the chocolate chunks, reserving a small handful to scatter on top.

  6. Pour the batter into the prepared loaf pan, smooth the top, and scatter the reserved chocolate chunks over the surface.

  7. Bake for 55-60 minutes, until a skewer inserted into the center comes out with just a few moist crumbs.

  8. Let the bread cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely before slicing.
