Baghrir Pancakes with Brown Butter Spiced Apples

  • 250 gFine semolina
  • 50 gAll-purpose flour
  • 2 gInstant yeast
  • 1 tspBaking powder
  • 0.5 tspSalt
  • 500 mlWarm water
  • 80 gUnsalted butter
  • 3 mediumApples, peeled and sliced
  • 3 gBrown sugar
  • 1 tspGround cinnamon
  • 2 tbspHoney, for serving

Instructions

  1. Blend the semolina, flour, yeast, baking powder, salt, and warm water in a blender until completely smooth, about 1 minute. Let the batter rest for 15-20 minutes until slightly bubbly.

  2. Heat a non-stick pan over medium heat (no oil needed). Pour a ladleful of batter and cook undisturbed until bubbles form and cover the entire surface and the top looks dry and set — do not flip.

  3. Remove and stack the baghrir on a plate, covering with a clean towel to keep soft. Repeat with the remaining batter.

  4. For the topping, melt the butter in a skillet over medium heat, swirling occasionally, until it turns golden brown and smells nutty, about 3-4 minutes.

  5. Add the sliced apples, brown sugar, and cinnamon to the brown butter, and cook for 6-8 minutes, stirring occasionally, until the apples are tender and caramelized.

  6. Spoon the warm brown butter spiced apples generously over the stacked baghrir.

  7. Drizzle with honey and serve immediately while warm.
