  • 2 canschickpeas
  • 2 largesweet potato
  • 400 gcrushed tomatoes
  • 2 tspras el hanout
  • 2 cupsvegetable broth
  • 2 mlolive oil
  • 3 cupsfresh spinach

Instructions

  1. Sauté diced sweet potato in oil until lightly golden.

  2. Add spices, tomatoes, broth, and chickpeas. Simmer covered 20 minutes.

  3. Stir in spinach until wilted. Adjust seasoning.

  4. Serve with couscous or warm flatbread.
