Chicken Tagine with Preserved Lemon
A classic Marrakech tagine—tender chicken braised with olives, preserved lemon, and warm saffron.
Ingredients
Scaled from 4 base servings — local only.
- 8 pieceschicken thighs
- 2 wedgespreserved lemon
- 0.75 cupgreen olives
- 2 largeyellow onion
- 4 wholegarlic cloves
- 1 tspground ginger
- 1 tspturmeric
- 0.25 large pinchsaffron threads
- 3 mlolive oil
- 0.5 tbspfresh cilantro
Instructions
Season chicken with salt, ginger, and turmeric. Brown in olive oil in a tagine or heavy pot.
Slice onions and garlic; layer over chicken with saffron steeped in warm water.
Add olives and preserved lemon. Cover and simmer on low for 45–50 minutes until chicken is tender.
Rest 5 minutes, scatter cilantro, and serve with crusty bread or couscous.
