  • 8 pieceschicken thighs
  • 2 wedgespreserved lemon
  • 0.75 cupgreen olives
  • 2 largeyellow onion
  • 4 wholegarlic cloves
  • 1 tspground ginger
  • 1 tspturmeric
  • 0.25 large pinchsaffron threads
  • 3 mlolive oil
  • 0.5 tbspfresh cilantro

Instructions

  1. Season chicken with salt, ginger, and turmeric. Brown in olive oil in a tagine or heavy pot.

  2. Slice onions and garlic; layer over chicken with saffron steeped in warm water.

  3. Add olives and preserved lemon. Cover and simmer on low for 45–50 minutes until chicken is tender.

  4. Rest 5 minutes, scatter cilantro, and serve with crusty bread or couscous.
