Chebakia & White Chocolate Cookies
A playful fusion cookie that folds the warm spices of traditional chebakia — cinnamon, anise, and toasted sesame — into a soft-baked cookie studded with white chocolate chunks. It bridges Moroccan pastry flavor with a familiar cookie-jar favorite.

- 280 gAll-purpose flour
- 0.5 tspBaking soda
- 1 tspGround cinnamon
- 1 tspAnise seeds, crushed
- 3 tbspToasted sesame seeds
- 0.25 tspSalt
- 170 gUnsalted butter, softened
- 150 gBrown sugar
- 60 gGranulated sugar
- 1 wholeEgg
- 1 tspVanilla extract
- 200 gWhite chocolate, chopped into chunks
Instructions
Preheat the oven to 180°C (350°F) and line two baking sheets with parchment paper.
In a bowl, whisk together the flour, baking soda, cinnamon, crushed anise seeds, toasted sesame seeds, and salt.
In a separate large bowl, cream the softened butter with the brown sugar and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually mix in the dry ingredients until just combined, then fold in the white chocolate chunks.
Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them a few centimeters apart.
Bake for 11-14 minutes, until the edges are golden but the centers still look slightly soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
