Traditional Moroccan Salad (Shlada)

  • 4 mediumtomatoes
  • 1 largecucumber
  • 0.5 mediumred onion
  • 2 tbspfresh cilantro
  • 2 tbspfresh parsley
  • 3 tbspextra virgin olive oil
  • 1.5 tbspfresh lemon juice
  • 0.5 tbspground cumin
  • 0.5 tspsalt
  • 0.25 tspblack pepper

Instructions

  1. Peel the cucumber, cut it in half lengthwise, and scoop out the seeds if desired. Dice the cucumber very finely.

  2. Core the tomatoes and dice them into small pieces roughly the same size as the cucumber. Finely chop the red onion.

  3. In a large mixing bowl, combine the diced cucumber, tomatoes, red onion, finely chopped cilantro, and parsley.

  4. In a small, separate bowl, whisk together the extra virgin olive oil, fresh lemon juice (or white vinegar), ground cumin, salt, and black pepper to create the vinaigrette.

  5. Pour the dressing over the chopped vegetables and herbs. Toss gently but thoroughly to ensure everything is evenly coated.

  6. Taste and adjust the salt or lemon juice if necessary. Serve immediately at room temperature, or cover and chill in the refrigerator for 30 minutes to allow the flavors to meld.
