Sfenj (Moroccan Donuts)
Puffy, crispy fried Moroccan donuts with a hollow center. Typically served warm with honey or plain sugar. A beloved street food and breakfast staple.

- 1 tspSalt
- 500 gAll-purpose flour
- 1 gInstant yeast
- 250 mlWarm water
- 1 tbspSugar
- 2 tbspHoney (for serving)
- 100 mlVegetable oil (for frying)
Instructions
Combine all-purpose flour, warm water, instant yeast, salt, and sugar. Mix until a sticky dough forms. Let rest for 30 minutes.
Heat vegetable oil in a deep pan to 160°C (320°F). Oil your hands generously. Pinch off a piece of dough and gently shape into a ball, then poke a hole through the center with your thumb to form a donut shape.
Carefully slide the donut into the hot oil. Fry for 2–3 minutes per side until golden and cooked through. The donuts should puff up dramatically.
Remove with a slotted spoon and drain on paper towels. Serve warm, drizzled with honey or dusted with sugar.
