Moroccan Chicken Kebabs with Fennel-Orange Herb Salad
Grilled chicken kebabs marinated in Moroccan spices, served alongside a fresh salad of fennel and orange with herby dressing.
Ingredients

- 4 tbspOlive oil
- 1 tspSalt
- 3Garlic cloves, minced
- 2 tbspRas El Hanout spice blend
- 3 tbspLemon juice
- 1 tbspRed wine vinegar
- 600 gChicken breasts, cut into chunks
- 300 gFennel bulbs, thinly sliced
- 2Oranges, segmented
- 100 gFresh mint, cilantro, and parsley
Instructions
Combine chicken chunks with olive oil, lemon juice, Ras El Hanout, minced garlic, and salt. Marinate for at least 30 minutes.
Thread chicken onto skewers. Grill or broil for 12-15 minutes, turning occasionally, until cooked through.
Combine sliced fennel, orange segments, and fresh herbs in a bowl. Dress with red wine vinegar and remaining olive oil.
Serve kebabs alongside the fennel-orange salad.
