Zaatar & Black Olive Harcha

Seasoned semolina skillet bread infused with zaatar spice blend and studded with black olives. A flavorful, herby variation on classic harcha.

  • 1 tspSalt
  • 200 gAll-purpose flour
  • 250 gFine semolina
  • 50 mlWarm water
  • 150 mlWarm milk
  • 100 gButter or ghee, softened
  • 2 tbspButter or oil (for cooking)
  • 2 tbspZaatar spice blend
  • 100 gBlack olives, pitted and chopped

Instructions

  1. Make dough: Combine fine semolina, all-purpose flour, softened butter, warm milk, warm water, salt, zaatar spice blend, and chopped black olives. Knead until a smooth dough forms.

  2. Shape: Divide into 8 equal pieces. Roll each piece into a flat cake about 1.5 cm thick.

  3. Cook: Heat butter in a skillet over medium-high heat. Cook each harcha for 2-3 minutes per side until golden.

  4. Serve: Serve warm with additional zaatar and olive oil for dipping.
