Sweet Chermoula Tuna Tartare with Cucumber Noodles

  • 3 tbspOlive oil
  • 150 tbspFresh cilantro, chopped
  • 100 gFresh parsley, chopped
  • 1 tspSalt
  • 0.5 tspBlack pepper
  • 1 gHoney
  • 50 gSesame seeds, toasted
  • 2 mlFresh lemon juice
  • 3Garlic cloves, minced
  • 1 tspPaprika
  • 2 tbspFresh mint, torn
  • 400 gSushi-grade tuna, finely diced
  • 600 gEnglish cucumber or zucchini

Instructions

  1. Make the chermoula: Combine fresh cilantro, fresh parsley, minced garlic, fresh lemon juice, paprika, ground cumin, olive oil, and honey in a food processor. Pulse until a chunky paste forms. Do not overblend.

  2. Combine tuna and chermoula: In a bowl, gently fold the chermoula into sushi-grade tuna. Be careful not to break up the tuna. Season to taste with additional salt and pepper.

  3. Prepare cucumber noodles: Using a spiralizer or mandoline, create noodles from English cucumber. Toss with rice vinegar, salt, and black pepper.

  4. Plate: Divide cucumber noodles among four plates. Top with a spoonful of chermoula tuna tartare.

  5. Garnish and serve: Garnish with fresh mint and toasted sesame seeds. Serve immediately and eat cold.
