Comforting tomato-lentil soup traditionally served to break the fast—bright with lemon and herbs.
Ingredients
Scaled from 4 base servings — local only.
- 1 cupred lentils
- 1 canschickpeas
- 800 gcrushed tomatoes
- 3celery stalks
- 1 tbspfresh parsley
- 1 tbspfresh cilantro
- 0.5 tspground cinnamon
- 3 tbsplemon juice
Instructions
Sauté diced celery in oil until softened. Add tomatoes, lentils, spices, and 6 cups water.
Simmer 25 minutes, then blend partially for a silky texture.
Stir in drained chickpeas and chopped herbs; cook 5 minutes more.
Finish with lemon juice and serve with dates or chebakia pastries.
