Chebakia \"Rose des Sables\"
Traditional Moroccan pastry swirls flavored with aniseed and coated in crispy sesame seeds. A beloved holiday treat and special occasion dessert.
Ingredients

- 1 tspSalt
- 2 tbspOrange blossom water
- 500 gAll-purpose flour
- 100 gButter, melted
- 75 gGranulated sugar
- 7 gInstant yeast
- 100 gSesame seeds
- 1Large egg
- 75 mlVegetable oil (for frying)
- 250 mlWarm milk
- 1 tbspAniseed
Instructions
Make dough: Combine all-purpose flour, instant yeast, granulated sugar, salt, warm milk, large egg, melted butter, aniseed, and orange blossom water. Mix until a soft dough forms.
Knead and rise: Knead for 8–10 minutes until smooth and elastic. Cover and let rise for 1 hour until doubled.
Shape: Divide into small balls and shape each into a thin rope. Form into a rose or spiral shape by coiling the rope.
Fry: Heat vegetable oil in a deep pan to 170°C (340°F). Carefully fry each chebakia for 2–3 minutes until golden on both sides.
Coat with honey and sesame: Remove with a slotted spoon and transfer to paper towels. While still warm, dip into a bowl of honey and sprinkle with sesame seeds.
