Bissara (Split Pea & Fava Bean Dip)
A velvety, creamy Moroccan dip made from split peas and fava beans, seasoned with cumin and garlic. Perfect with bread or as an appetizer.

- 2 tspGround cumin
- 4 tbspOlive oil
- 2 tbspFresh cilantro, chopped
- 1 tspSalt
- 0.5 tspBlack pepper
- 1000 mlWater
- 4Garlic cloves, minced
- 0.5 tspPaprika
- 200 gDried split peas
- 150 gDried fava beans
Instructions
Rinse split peas and fava beans. Combine with water in a pot, bring to a boil, then reduce heat and simmer for 25-30 minutes until very soft.
Drain if necessary, reserving some cooking liquid. Mash or blend until creamy, adding reserved liquid as needed.
Heat olive oil and cook minced garlic with cumin and paprika for 1 minute. Stir into the pea mixture. Season with salt and pepper.
Transfer to a serving bowl, drizzle with additional olive oil, and garnish with fresh cilantro. Serve warm with bread.
