Taktouka (Moroccan Pepper & Tomato Salad)
A rustic Moroccan salad of charred peppers and tomatoes, seasoned with cumin and olive oil. Smoky, simple, and utterly delicious.
Ingredients
Scaled from 4 base servings — local only.
- 500 gRed or mixed bell peppers
- 500 gRipe tomatoes
- 4Garlic cloves, minced
- 3 tbspOlive oil
- 1 tbspRed wine vinegar
- 1 tspGround cumin
- 0.5 tspPaprika
- 1 tspSalt
- 0.5 tspBlack pepper
- 3 tbspFresh cilantro, chopped
Instructions
Char peppers directly over a gas flame or under a hot broiler until the skin is blackened all over. Place in a plastic bag for 10 minutes to steam. Peel away the charred skin and remove seeds. Dice the peppers into rough chunks.
Char ripe tomatoes in the same way until the skins are blackened. Peel and dice.
In a bowl, combine charred peppers and tomatoes with minced garlic, olive oil, red wine vinegar, ground cumin, paprika, salt, and black pepper. Mix gently.
Let sit for at least 30 minutes to allow flavors to meld. Taste and adjust seasonings. Garnish with fresh cilantro and serve at room temperature.
