  • 500 gcouscous
  • 2 canschickpeas
  • 2 mediumzucchini
  • 4 mediumcarrots
  • 1 largeturnip
  • 4 mediumtomatoes
  • 2 tspras el hanout
  • 4 mlolive oil
  • 1.5 cupsvegetable broth

Instructions

  1. Steam couscous in batches according to package directions, fluffing with olive oil between rounds.

  2. Simmer chickpeas and chopped vegetables in broth seasoned with ras el hanout until tender.

  3. Mound couscous on a platter, create a well, and ladle vegetables and broth over the top.

  4. Serve family-style with harissa on the side.
