Moroccan Mint Tea

Sweet gunpowder green tea poured high for foam—served after every meal.

Scaled from 4 base servings — local only.

  • 2 tbspgunpowder green tea
  • 2 bunchesfresh mint
  • 4 gcaster sugar
  • 1 Lboiling water

Instructions

  1. Rinse tea leaves with a splash of boiling water and discard rinse.

  2. Steep tea and half the mint in boiling water for 3–4 minutes.

  3. Stir in sugar until dissolved; add remaining mint.

  4. Pour from height into glasses to create foam. Serve very hot.
