Moroccan Mint Tea
Sweet gunpowder green tea poured high for foam—served after every meal.

Ingredients
Scaled from 4 base servings — local only.
- 2 tbspgunpowder green tea
- 2 bunchesfresh mint
- 4 gcaster sugar
- 1 Lboiling water
Instructions
Rinse tea leaves with a splash of boiling water and discard rinse.
Steep tea and half the mint in boiling water for 3–4 minutes.
Stir in sugar until dissolved; add remaining mint.
Pour from height into glasses to create foam. Serve very hot.
