Fekkas Cereal (Mini Biscotti Bites)
Bite-sized twice-baked Moroccan fekkas, broken into crunchy cereal-like nuggets studded with almonds, anise, and sesame. Perfect for snacking by the handful or scattering over yogurt, these mini biscotti bites bring all the flavor of classic fekkas in a fun, snackable format.
Ingredients

- 0.25 tspSalt
- 300 gAll-purpose flour
- 70 mlVegetable oil
- 2 tspAnise seeds
- 1.5 tspBaking powder
- 2 wholeEggs
- 100 gGranulated sugar
- 2 tbspSesame seeds, toasted
- 100 gAlmonds, roughly chopped
Instructions
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a bowl, whisk the eggs, sugar, and vegetable oil together until well combined.
Stir in the anise seeds, sesame seeds, and salt.
Fold in the flour and baking powder until a soft dough forms, then fold in the chopped almonds.
Shape the dough into a flat log about 4cm wide directly on the prepared baking sheet.
Bake for 25 minutes, until firm and lightly golden, then remove and let cool for 10 minutes.
Reduce the oven temperature to 150°C (300°F). Slice the log into small, bite-sized pieces (smaller than traditional fekkas slices, roughly 1.5cm chunks).
Spread the pieces out on the baking sheet and return to the oven for 12-15 minutes, tossing halfway through, until fully dried and crisp throughout.
Let cool completely — the pieces will crisp up further as they cool. Store in an airtight container as a crunchy snack or cereal topping.
