Walnut & Matcha Ghriba (Gluten-Free)

Ingredients

- 0.5 tspSalt
- 100 gPowdered sugar
- 0.5 tspVanilla extract
- 50 gCornstarch
- 200 gButter, softened
- 1Large egg yolk
- 150 gGluten-free all-purpose flour
- 2 tbspMatcha green tea powder
- 100 gToasted walnuts, finely chopped
- 16Whole roasted walnuts (for topping)
Instructions
Cream butter and sugar: Preheat oven to 170°C (340°F). Cream softened butter and powdered sugar until light and fluffy.
Mix dry ingredients: Whisk together gluten-free flour, cornstarch, matcha green tea powder, and salt. Add to the butter mixture along with egg yolk and vanilla extract. Mix until just combined.
Add walnuts: Fold in toasted walnuts.
Shape cookies: Scoop dough into balls and place on a parchment-lined baking sheet. Gently press a walnut into the top of each.
Bake: Bake for 12–15 minutes until lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
